steak salad
Presentation is usually not my strong point, so I'm pretty happy of the way it all turned out.
I got the recipe from here.
However, I did modify it a bit to make it more my own. (Also, potatoes in a lettuce salad seems wrong to me.)
Horseradish Dressing
1/2 cup of plain Greek yogurt
3 tablespoons horseradish (from a jar)
3 tablespoons fresh chopped chives
2 teaspoons sugar
1 teaspoon red wine vinegar (add more if the horseradish is too hot)
Pinch of salt and pepper
Salad
1 cucumber, thinly sliced
4 radishes, thinly sliced
1.5 bags of spinach and arugula mix
1 red onion pickled (Pickling is surprisingly simple. Slice onion thinly, bring 1 cup of water and 3 tablespoons of red wine vinegar to a boil, remove from heat. Put onions in mixture and let cool until pickled)
Steak
1 pound of skirt steak-rub down with salt and pepper
Whisk together the dressing, chop up your veggies, prep your onions, and make the meat. We were able to put the steak on the grill, but you also can heat up a pan with a tablespoon of olive oil and cook for about 3-4 minutes on each side.
